Summer Salad

I’ve declared today a day that I’m going to randomly share a recipe. This is a salad my husband and I (and a lot of our friends and family) have grown to love. It’s fresh, cool, delicious and surprisingly healthy. For lactose intolerance, remove the mozzarella altogether or replace it with a soy or coconut based “cheese” substitute.

Crispy Summer Salad

  • 3 Cucumbers
  • 5 large Roma tomatoes
  • 1 small red Onion
  • 1 block of low moisture/low fat mozzarella

Wash all veggies, remove seeds if desired, cut it all up into bite size pieces, mix together. Cut up the cheese into small bite size pieces and mix in. Serve with a light vinaigrette dressing.  You can dice up cooked chicken breast or chicken sausage and add that to it.
